Silverbeet and Mushroom Toast

8 stalks of silverbeet

6 button mushrooms

2 cloves of garlic

Hummus- DIY or store bought (enough to lather the toast)

2 slices of bread

Olive oil or ghee

Grated parmesan


Heat a tablespoon of olive oil in a medium sized pan

Roughly chop the silverbeet and garlic, slice the mushrooms

Saute the garlic for 1-2 minutes before adding the silverbeet and mushrooms

Stir until the mushrooms are soft whilst toasting the bread in the grill/ toaster

Lather the toast with hummus

Remove silverbeet and mushrooms from the stove and top the toast

Finish with grated parmesan

***Break-ify this by adding poached eggs, haloumi or avocado

***Lunch-ify by adding grilled chicken/ tofu, roasted chickpeas or avocado
